Lower fat, sodium, veggies added turkey meat loaf. I had no bread crumbs or bread so I used whole wheat couscous and it was great. Next I will try low sugar ketsup...or low sugar bbq sause!

Recipe Ingredients for Low fat turkey meat loaf experimental:)

32 oz Fresh Ground Turkey
1 cup, chopped Onions
2 cup, chopped Squash, Summer, Zucchini, Includes Skin
2 oz Whole Grain Blends Wheat Couscous
1 piece Fresh Garlic
6 oz Ketchup
1 tsp dry mix Meat Loaf Seasoning

Recipe Directions for Low fat turkey meat loaf experimental:)

  1. I grind zucchnis(to hide them) and chop onions put aside.

  2. Add all wet ingredients to large bowl then couscous with season packets from couscous and meat loaf seasoning.

  3. Add the veggies mix a bit more.

  4. I use my hands to make sure it's mixed through...but it's messy.

  5. Lightly spray olive oil spray on baking sheet.

  6. I make small loafs which is fun for the kids and faster cooking.

  7. Place in heated oven.

  8. 30min at 375 or till meat thermometer says 165.

  9. Let set for a min and serve with salad and steamed veggies.

  10. Any left overs can be sliced and made into sandwhiches for lunches!
