A simple and healthy Mexican casserole. 9 WW Points per serving

Recipe Ingredients for Low-Fat Taco Casserole

4 oz
8 1/2 oz
1/4 cup Egg Beaters
1/3 cup skim milk
13 oz salsa
1 oz jalapenos (sliced)
1 1/4 oz taco seasoning
1 lb ground turkey

Recipe Directions for Low-Fat Taco Casserole

  1. Scramble fry the ground turkey and drain. Mix in the taco seasoning and salsa and spread evenly in a 2 quart casserole dish.

  2. Spread half of the cheddar cheese over the ground turkey.

  3. Mix corn muffin mix, Egg Beaters and skim milk together. Pour over cheese and turkey.

  4. Sprinkle the rest of the cheese over the corn muffin mixture. Add jalapeno slices.

  5. Cover dish and bake in oven at 375 degrees for 30 minutes or until corn muffin mixture is fully baked.
