Recipe Ingredients for Low fat/sugar chocolate rice pudding

5 cups skim milk
2/3 cup Arborio rice
3/4 cup splenda
1 teaspoon vanilla extract
2 tablespoon unsweetened cocoa powder

Recipe Directions for Low fat/sugar chocolate rice pudding

  1. In a saucepan, combine the milk, rice, and splenda.

  2. Add one teaspoon vanilla extract, or preferably the beans of one vanilla bean.

  3. Bring the milk to a boil, stirring occasionally.

  4. Reduce heat and simmer, stirring frequently, until the rice is tender and the mixture thickens, about 35 to 40 minutes.

  5. Remove the pan from the heat, stir the cocoa powder in. Allow the mixture to cool for 10 minutes, stirring occasionally.

  6. Spoon the rice pudding into serving bowls. Cover and refrigerate for 2 1/2 to 3 hours and up to 1 day ahead.
