Recipe Ingredients for Low-Fat Strawberry Muffins (or Muffin Tops)

1 1/2 cups all-purpose flour
1/2 cup splenda
2 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
2/3 cup fat free yogurt (vanilla)
2 tablespoon apple butter
1 tablespoon canola oil
3 tablespoons unsweetened almond milk
1/4 cup egg beaters
1/4 cup strawberry jam, unsweetened
1 tablespoon sugar
1/2 teaspoon ground cinnamon

Recipe Directions for Low-Fat Strawberry Muffins (or Muffin Tops)

  1. Preheat oven to 375.

  2. Lightly spoon flour into dry measuring cups, and level with a knife. Combine flour and the next 4 ingredients (flour through salt) in a large bowl, stirring well with a whisk.

  3. Make a well in center of flour mixture.

  4. Combine yogurt, almond butter, oil, almond milk, and egg beaters in a bowl, stirring well with a whisk.

  5. Add yogurt mixture to flour mixture, stirring just until moist.

  6. Place 12 foil cup liners in muffin cups; coat liners with cooking spray.

  7. If you want to make 12 muffin tops, bake, spooned out on parchment or a silpat baking sheet.

  8. Spoon 1 tablespoon batter into each liner.

  9. Top each with 1 teaspoon jam.

  10. Top evenly with the remaining batter.

  11. Combine 1 tablespoon sugar and 1/2 teaspoon cinnamon; sprinkle over batter.

  12. Bake at 375 for 15 minutes or until a wooden pick inserted in center comes out clean.

  13. Cool in pan on a wire rack for 15 minutes.

  14. Remove from pan; place on a wire rack.
