Recipe Ingredients for Low-fat Strawberry-Cinnamon Muffins

1 1/2 cup whole wheat flour
1/2 cup brown sugar
1 tbsp brown sugar
2 1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/4 tsp salt
2/3 cup yogurt, low-fat
1/4 cup butter
3 tbsp skim milk
1 large egg
1/4 cup jam, strawberry

Recipe Directions for Low-fat Strawberry-Cinnamon Muffins

  1. Preheat the oven to 375 degrees. Put a muffin liner into each cup of a 12-cup muffin pan.

  2. Lightly spoon the flour into dry measuring cups, and level with a knife. In a large bowl, combine the flour, 1/2 cup of the brown sugar, baking powder, 1 teaspoon of the cinnamon, and salt, whisking well.

  3. In a small bowl, combine the yogurt, butter, margarine, milk, and egg, whisking well.

  4. Make a well in the center of the flour mixture. Add the yogurt mixture to the flour mixture, stirring just until moist.

  5. Spoon 1 tablespoon of batter into each liner. top the batter with 1 teaspoon jam. Top evenly with the remaining batter.

  6. Combine the remaining 1 tablespoon brown sugar and 1/2 teaspoon cinnamon; sprinkle over the batter. Bake for 20-25 minutes, or until lightly brown on top.
