This delicious twist on classic banana bread is one of my favorites. Strawberry and banana have always gone well together, but this one takes the cake, pun intended! I tweaked the original recipe to make it healthier, using honey and molasses instead of white and brown sugar and substituting applesauce for some of the butter; this lowered both the sugar and the fat (the latter more than the former) content significantly.

Recipe Ingredients for Low Fat Strawberry Banana Bread

2 cups flour
1 1/8 tsp baking soda
1/2 tsp baking powder
4/5 cup honey
2 tbsp molasses
2 tbsp butter
1/3 cup applesauce
2 eggs
1/2 tsp vanilla extract
3 bananas, mashed
1 cup strawberries, chopped

Recipe Directions for Low Fat Strawberry Banana Bread

  1. Preheat the oven to 350F. Lightly grease a 95 inch loaf pan.

  2. In a mixing bowl, mix the flour, baking soda and baking powder together.

  3. In another bowl, beat together the butter (or margarine, if you prefer), and honey. Then add in the eggs, vanilla, molasses, and mashed bananas and mix thoroughly.

  4. Stir in the chopped strawberries.

  5. Slowly add the flour mixture into the wet ingredients, stirring well as you go.

  6. Pour the mixture into your prepared loaf pan and bake on 350F for around 1 hour or until a toothpick inserted in the center comes out clean.

  7. Allow to cool for 10 minutes in the loaf pan before removing and placing on a wire cooling rack to cool fully.
