Recipe Ingredients for Low Fat Spinach Lasagna

2 cups cottage cheese, low fat
1 large egg
2 cups mozzarella cheese, part skim milk
24 oz Tomato Garlic and Onion Chunky Garden Pasta Sauce
10 oz baby spinach
9 sheet lasagna noodles
3/4 tsp oregano, ground

Recipe Directions for Low Fat Spinach Lasagna

  1. Cook spinach in a large pot for 5 min. Place cooked spinach in colander and drain.

  2. In a large bowl mix drained spinach, cottage cheese, 1 cup mozzarella, egg and seasonings.

  3. Spray cooking spray on a lasagna tray or 13x9x2 baking dish. Layer 1/2 cup sauce, 3 noodles and 1/2 cheese mixture. Repeat layer.

  4. Top with remaining noodles then sauce and sprinkle with 1 cup of mozzarella.

  5. You can also sprinkle grated parmesan cheese on top.

  6. Cover with foil and bake at 350* for 1 hour to 1 hour 15 minutes, or until lasagna is bubbly.

  7. Let stand for 15 minutes before serving.

  8. Note: You can also substitute chopped broccoli for the spinach.
