low-fat risotto from Cook Yourself Thin, originally with prawns instead of chicken and different veg.

Recipe Ingredients for Low-fat Risotto

150 g risotto rice
75 ml white wine
750 ml chicken stock
2 stalks broccoli
150 g chicken breast
3 tbs low-fat creme fraiche
75 g mushrooms, sliced

Recipe Directions for Low-fat Risotto

  1. gently fry onions and garlic until translucent. Add rice and continue frying for two minutes. Add wine and continue stirring until the wine is absorbed.

  2. Start to add the stock, ladle by ladle, until the stock is absorbed between each spoonful. Stir regularly so starch comes out of rice grains. Continue for 10-15 minutes.

  3. Add spring onion, continue cooking for five minutes and then add chicken (pre-cooked) and creme fraiche.

  4. IMPORTANT: keep tasting rice to make sure it is al dente, then remove from heat (about 5 more minutes).

  5. add squeeze of lemon and basil.
