an easy quiche put in phyllo dough

Recipe Ingredients for low fat quiche

3/5 oz phyllo dough (4 1/2 sheets)
1/2 cup low fat mozzarella
1/2 cup ricotta
1/2 cup 2% cheddar cheese
1/2 cup onion
2 large eggs

Recipe Directions for low fat quiche

  1. Mix together all the ingredients except the phyllo dough - add 1/4 t. garlic, pepper to taste and a dash of cayenne pepper

  2. use six sheets of phyllo dough to make 12 phyllo cups - (instructions on inside of box for phyllo)

  3. fill each cup with 1 & 1/2 T of filling - fold tops over

  4. Bake at 350 for approx 15 min - until light brown - serve warm or cold
