Perfect for crisp fall mornings. The orange juice adds natural sugars instead of using a full cup of refined sugar. Apple juice can be used instead of orange juice for a slightly different sweet.

Recipe Ingredients for Low fat pumpkin spice bread

1 3/4 cups whole wheat flour
1/2 cup sugar
1 1/2 tsp pumpkin pie spice
1 tsp baking soda
1 tsp baking powder
1/2 cup orange juice
1 cup pumpkin, canned or cooked
1/2 cup pecans, chopped

Recipe Directions for Low fat pumpkin spice bread

  1. Mix flour, sugar, pumpkin pie spice, baking soda, and baking powder in a bowl. Add the orange juice and pumpkin and mix just until dry ingredients are moistened. Fold in pecans (optional).

  2. Spray a bread pan with non-stick spray and evenly spread the dough. Cook at 350 for 40 to 45 minutes.
