Recipe Ingredients for Low-fat Pumpkin Spice Bars

1 1/2 cups all-purpose flour
1 cup whole wheat flour
1 1/2 teaspoons baking soda
1/2 cup sugar
1 tablespoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
2/3 cup molasses
2 egg whites
1 cup water
1/2 cup canned pumpkin
1/2 cup raisins
1/4 cup walnuts

Recipe Directions for Low-fat Pumpkin Spice Bars

  1. Preheat the oven to 350F. Coat a 13" x 9"baking pan with cooking spray.

  2. In a large bowl, combine the all-purpose flour, whole wheat flour, baking soda, sugar, cinnamon, cloves, and nutmeg. Add the molasses, egg whites, water, and pumpkin and stir until thoroughly mixed. Stir in the raisins and walnuts. Spread evenly in the prepared baking pan.

  3. Bake for 25 to 30 minutes, or until a wooden pick inserted in the center comes out clean. Cool in the pan and cut into 2" squares.
