These muffins don't taste low fat. You can add raisins and/or nuts. Egg and sugar substitutes can also be used, but my family likes them just the way these are!

Recipe Ingredients for Low Fat Pumpkin Muffins

2 1/2 cups whole wheat flour
2 1/4 cups all-purpose flour
4 cups white sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 1/2 teaspoons nutmeg
1 1/2 teaspoons cinnamon
1 1/2 teaspoons ground cloves
6 eggs
29 ounce pumpkin
1 cup unsweetened applesauce

Recipe Directions for Low Fat Pumpkin Muffins

  1. Mix dry ingredients.

  2. Mix wet ingredients.

  3. Blend two together, stirring only until mixed.

  4. Pour into greased or papered muffin tins.

  5. Bake at 350 for 28-30 minutes.
