Recipe Ingredients for Low Fat Pumpkin Cookies

1/2 cup nonfat yogurt
1/2 tsp. vanilla extract
1/4 cup firmly packed brown sugar
1 egg
1 cups pumpkin puree
1 tsp. cinnamon
1/2 tsp. nutmeg
1/8 tsp. cloves
1/8 tsp. ginger
1 cup rolled oats
2 tsp. baking powder
1 cup whole wheat flour
1/2 cup white flour
1/2 cup raisins or dates (optional)
1/2 cup chopped walnuts (optioinal)

Recipe Directions for Low Fat Pumpkin Cookies

  1. Preheat oven to 350 degrees.

  2. In a mixing bowl, blend together first five ingredients. Mix in spices, oats, and baking powder; then fold in flour, raisins or dates, and nuts.

  3. Drop cookie dough by tablespoons onto a nonstick cookie sheet, and bake for 10 to 12 minutes.
