Delicious dessert made with low-sugar cake mix and with pumpkin instead of oil and eggs, which cuts down on fat! Drizzle with the apple glaze for extra sweetness, or eat it without or with icing of your choice. Feel free to adjust the amounts of spice to your taste.

Recipe Ingredients for Low-fat Pumpkin Cake with Spiced Apple Glaze


Cake:
12 servings (1 package) reduced sugar cake mix
15 oz pumpkin puree
1 tbsp pumpkin pie spice (optional)

Glaze:
1 cup powdered sugar
1/2 tbsp pumpkin pie spice
2 tbsp apple juice

Recipe Directions for Low-fat Pumpkin Cake with Spiced Apple Glaze

  1. Preheat oven to 350

  2. Mix one package of cake mix with 15 oz of canned pumpkin puree (not pumpkin pie mix, just straight-up pumpkin). Add pumpkin pie spice if you like.

  3. Place in a greased 7x11 pan. The batter will be thick, so you might have to spread it with a rubber scraper.

  4. Cook for 28 minutes or until a toothpick comes out clean from the center.

  5. Allow cake to cool.

  6. Mix glaze ingredients thorougly and pour over the top of the cake. Let it set completely before covering.
