Got this recipe off of a recipe site then made subs to make it lower in fat and sugar.

Recipe Ingredients for Low-fat pumpkin bread

1 1/2 cups sugar
1 1/2 cups flour
4 servings sugar-free vanilla pudding mix
1/2 c. semisweet chocolate chips
2/3 c. applesauce
1/3 c. canola oil
1 egg, whole
2 egg whites
1 1/2 cups pumpkin
3/4 tsp. baking soda
3/4 tsp. salt
3/4 tsp cinnamon

Recipe Directions for Low-fat pumpkin bread

  1. Blend eggs, applesauce, oil and pumpkin.

  2. Mix dry ingredients in a separate bowl then add to pumpkin mixture.

  3. Bake for 1 hour at 350 degrees in prepared bundt pan.
