Low fat potato salad for summer-time menus.

Recipe Ingredients for Low fat Potato Salad

2 pounds potatoes
1/4 cups finely chopped green onions
1/4 cups prepared mustard
1/2 cups fat free mayonnaise
1/2 cups chopped celery

Recipe Directions for Low fat Potato Salad

  1. Wash potatoes. Heat 1 inch salted water to boiling. Add unpared potatoes. Cover tightly; heat to boiling and cook 30 to 35 minutes or until tender. Drain; cool and peel. Cut potatoes into cubes; combine in bowl with onions and celery. Mix with mayonnaise and mustard. Salt and Pepper to taste. Cover and refrigerate for at least 2 hours.

  2. Potatoes can be baked instead of boiling, chilled, then peeled when cold. Also, use more mayonnaise to mustard, as per taste.
