this salad uses dill pickle juice, vinegar and dijon mustard for most of the flavor and only uses a small amount of fat.

Recipe Ingredients for Low fat potato salad

2 pounds potatoes, boiled
2 tbsp Red wine vinegar
1 tsp. kosher salt
1/2 tsp. ground black pepper
3 hard boiled eggs, cut into small dice
2 scallions, sliced thin ( 1/2 cup)
17 g celery stalk ( 1/2 cup)
1/4 cup dill pickle, cut into small dice
1/2 cup mayonnaise
2 tbsp Dijon-style mustard
1/4 cup minced fresh parsley
2 tbsp pickle juice

Recipe Directions for Low fat potato salad

  1. 1. Cut the potatoes into cubes and boil them in salted water until for tender.

  2. 2. Layer warm potato cubes in medium bowl. Sprinkle with vinegar, seasoning with salt and pepper as you go.

  3. 3. Mix in remaining ingredients. If more moisture is needed, add more pickle juice instead of mayonaise. Refrigerate until ready to serve. Adjust seasonings and serve chilled
