I use vegetable stock in place of olive oil, but still use a little.

Recipe Ingredients for Low Fat Pesto

1 cup leaves, whole Basil, Fresh
0.33 cup Parmesan, Grated Cheese
0.66 cup Vegetable Stock
2 tbsp Olive Oil
0.156 cup, with hulls, edible yield Sunflower Seeds
2 clove Garlic
