Makes 12 servings



Enough sugar to satisfy taste and texture, but Splenda added (may omit) to reduce sugar content. Egg whites and applesauce reduce the fat content. Some of the flour is replaced with whole wheat flour. These are lightly sweet with a crunchy outside and soft inside. Earns a B+ on nutrition analysis with only 4% fat. Has 5% fiber.

Recipe Ingredients for Low-fat Oatmeal Raisin Cookies

1/2 c sugar
1/4 c Splenda granulated
2 tbsp oleo
3 tbsp egg whites
1/4 c applesauce
2 tbsp 1% milk
3/4 c all-purpose flour
1/4 c whole wheat flour
1/4 tsp baking soda
1/4 tsp cinnamon
1 c oats
2 tbsp oats
1/4 c raisins

Recipe Directions for Low-fat Oatmeal Raisin Cookies

  1. Preheat oven to 350 and spray cookie sheets.

  2. In large bowl, mix sugar and margerine at medium speed for 3 minutes.

  3. Slowly add egg whites, mix 1 minute.

  4. Add applesauce and milk, mix 1 minute.

  5. Scrape down sides of bowl, mix slightly.

  6. In medium bowl, combine flours, baking soda and cinnamon.

  7. Add dry mixture to large bowl and mix on low for 2 minutes.

  8. Add all oats, blend 30 seconds on low.

  9. Add raisins, blend 30 seconds on low.

  10. Drop by tsp onto cookie sheets 2" apart.

  11. Bake for 13-15 minutes until bottoms and sides are light brown.

  12. 24 cookies. One serving is 2 cookies. Or, make them bigger (12 cookies) and have 1 cookie per serving.
