Recipe Ingredients for Low-Fat Oatmeal Raisin Cookies

1 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
2 tbsp butter, room temperature
1/2 cup white sugar
1/2 cup brown sugar
1 large egg
1/4 cup applesauce
1/2 tsp vanilla extract
2 cups quick cooking oats
1 cup raisins

Recipe Directions for Low-Fat Oatmeal Raisin Cookies

  1. Preheat oven to 350F and line a baking sheet with parchment paper.

  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt and cinnamon.

  3. In a large bowl, cream together butter and sugars. Beat in egg, followed by applesauce and vanilla extract.

  4. Working by hand, stir in flour mixture and the oats until just combined and no streaks of flour remain. Stir in raisins.

  5. Drop tablespoonfuls of dough onto prepared baking sheet, flattening each cookie slightly. Bake for about 10-12 min. Cookies will be light brown at the edges when done.

  6. Let cool on sheet for 3 or 4 minutes, then transfer to a wire rack to cool completely.

  7. Store in an airtight container.
