Recipe Ingredients for Low Fat Oatmeal Cookie Pancakes

1 cup whole wheat flour
1/4 cup rolled oats
2 tsp baking powder
1 egg white, beaten
1 cup skim milk
1 tbsp canola oil
1/4 cup brown sugar
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/4 cup raisins

Recipe Directions for Low Fat Oatmeal Cookie Pancakes

  1. Mix ingredients until lumpy batter is formed.

  2. Pour 1/4 cup of batter onto a hot, lightly-greased griddle or a heavy skillet for each pancake.

  3. Cook until golden brown, turning to cook other side when pancakes have a bubbly surface and slightly dry edges.
