Low Fat banana and carrot muffins- you can use an equivilant amount of any mashed/ grated fruit/ veg in place of banana and carrot- possibilities are endless!

Recipe Ingredients for Low fat muffins

300 grams Self Raising Flour
4 tbsp Olive Oil
1 medium (7" to 7-7/8" long)(118 g) Bananas
300 grams Plain Low Fat Yogurt
1 medium raw Carrots
1 large Egg, Whole
1 large Egg, White
50 grams Natural Light Brown Muscovado Sugar
50 grams Sugars, Granulated

Recipe Directions for Low fat muffins

  1. Preheat oven to 350 F Gas 5

  2. Mix wet ingredients together

  3. Sift Dry ingredients together

  4. combine and spoon into greased muffin tin to 3/4 full.

  5. bake 15 min or until toothpick comes out clean.
