Vegan. Two (2) Weight-Watcher points

Recipe Ingredients for Low-fat Muffin Base

6 cups whole wheat flour (or mixed grains)
5 tbsp flax seeds, ground
2 tsp salt
2 tbsp baking powder (non-aluminum)
1/4 cup oil, melted palm shortening
1 1/2 cup almond milk
2 3/4 cup water (1 1/2 cans)
1/2 cup honey
1 tbsp vanilla

Recipe Directions for Low-fat Muffin Base

  1. Mix wet ingredients together (it should be about 4 - 5 1/4 cups liquid) Add the dry ingredients and mix just until combined. Do not over stir. Pour in muffin tin and bake for 18 minutes.

  2. (Alterations:)

  3. Pumpkin: Omit the water and almond milk. Add 2 cups pumpkin puree and 1 cup almond milk.

  4. Banana: Omit the water and almond milk. Add 2 cups banana, cup applesauce, and cup almond milk.

  5. Applesauce: Omit the water. Add 1-2 tsp cinnamon, 1 cups applesauce.

  6. Poppy Seed Muffins: Add 3 tbsp poppy seeds, 1/2 tsp almond flavoring and 1 tsp lemon flavoring.
