Yummy minestrone, sorta like the olive garden's! The beans wouldn't enter correctly - but it's two cans of red kidney beans, and two cans of small white (or great northern, or cannellini) beans.

Recipe Ingredients for Low-Fat Minestrone Soup

1 cup minced onion
1/2 cup chopped zucchini
1/2 cup frozen green beans
1/4 cup minced celery (about 1/2 stalk)
4 teaspoons minced garlic
4 cups vegetable broth
1756 grams beans
14 ounce diced tomatoes
1/2 cup carrot, shredded
2 tablespoons minced fresh parsley
1 1/2 teaspoons dried oregano
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
3 cups hot water
4 cups fresh baby spinach
1/2 cup uncooked small shell pasta

Recipe Directions for Low-Fat Minestrone Soup

  1. Saute first five ingredients (onion, zucchini, green beans, celery, and garlic) for five minutes.

  2. Add 3 cups of hot water plus the rest of the ingredients (except the spinach and pasta). Bring to a boil and simmer for 20-30 minutes.

  3. Add the pasta and spinach and simmer for an additional 20 minutes.
