Recipe Ingredients for low fat microwaved peach cobbler

0.33 cup, packed Sugars, Brown
1 tbsp Cornstarch
0.25 tsp Pumpkin Pie Spice
0.5 cup (8 fl oz) Water
3 cup slices Peaches
2 packet SPLENDA No Calorie
0.5 tsp Cinnamon, Ground
0.67 cup Gold Medal All Purpose Flour
0.33 cup dry Old Fashioned Quaker Oats
16 tsp Sweetener
1.5 tsp Baking Soda
0.75 cup Milk, Nonfat, Fluid
0.75 cup Milk, Nonfat, Fluid
0.75 tbsp Lemon Juice, Canned Or Bottled

Recipe Directions for low fat microwaved peach cobbler

  1. In 2-quart casserole dish, combine brown sugar, cornstarch, and pumpkin pie spice. Stir in water. Cook, uncovered, at HIGH power for 1 minute, stirring after 30 seconds, until mixture is thickened and bubbly. Add peaches; heat again, covered, at HIGH power for 5 minutes, until fruit mixture is boiling hot. In the meantime mix the cobbler topping! When the fruit is hot, spoon the topping into 5 or 6 mounds around the edges of the casserole dish. Mix the 2 teaspoons of sugar with the cinnamon and sprinkle it over the dumplings. Cover the casserole dish and cook on HIGH power for 4 minutes or until the dumplings are done.

  2. Ingredients for Cobbler Topping (included above but listed here so you know which is for topping)

  3. 2/3 cup flour

  4. 1/3 cup oatmeal

  5. 1/3 cup splenda

  6. 1 1/2 teaspoons baking powder

  7. 1/2 teaspoon baking soda

  8. 3/4 cup skim milk

  9. 3/4 TBSP lemon juice

  10. Combine skim milk & lemon juice & set aside for 5 mins. to create buttermilk substitute.Mix dry ingredients together. Add "buttermilk" and stir until just blended. Pour over hot fruit base and bake in the microwave on HIGH power for about 4 minutes) until the dumplings are done.

  11. When done baking..

  12. Let this dish cool as well.
