Easy and quick to prepare. Can be prepared in advance and/or frozen and reheated.

Recipe Ingredients for Low-fat mexican fritatta

4 large eggs
1/2 cup red peppers, chopped
1/2 cup onions, chopped
1/2 cup mushrooms, chopped
4 tbsp salsa
1/2 cup cheddar cheese, shredded
2 tbsp 1% milk

Recipe Directions for Low-fat mexican fritatta

  1. Fry veggies, then add the salsa and simmer to reduce liquid.

  2. Add the concentrated mixture to a pie dish and sprinkle cheese on top.

  3. In a bowl scramble the eggs with the milk and add to the pie dish with veggies, salsa and cheese.

  4. Make sure the eggs and mixture are evenly spread.

  5. Bake 375 for 20- 30 minutes or until a knife is clean after being pushed in the center.
