I found a recipe on the web and did some adjusting to suit our taste. The recipe calls for ground turkey; however, extra-lean ground beef also works well. Top with Creole Sauce Creole Sauce for a fabulous main course!

Recipe Ingredients for Low Fat Meatloaf

1 lb ground turkey
1 medium carrot, shredded
1 small zucchini, shredded and squeezed dry
1 small onion, chopped
6 button mushrooms, chopped
1/2 bell pepper, finely chopped
1 teaspoon Italian seasoning
2 tablespoons Worcestershire sauce
1 slice whole wheat bread
1/4 cup egg substitute or 1 whole egg
1/3 cup tomato ketchup

Recipe Directions for Low Fat Meatloaf

  1. Preheat oven to 400 degrees.

  2. Crumble the ground meat into a large bowl; add the shredded carrots, zucchini, onion, mushrooms and green pepper.

  3. Add the Italian seasoning and Worcestershire sauce.

  4. Mix ingredients lightly with a fork.

  5. Place the bread in a blender and process until fine crumbs; add the crumbs to the meat mixture along with the egg substitute or egg.

  6. Mix ingredients with a fork until well blended.

  7. Shape into a loaf and place in prepared pan and bake in oven for 60 minutes or until done.Serve immediately with Creole Sauce
