Recipe Ingredients for LOW FAT MASHED CAULIFLOWER POTATOES

1 head cauliflower (med)
2 medium potatoes
1/4 cup 2% milk
1/8 cup fat-free half and half
1/2 tsp salt
1/8 tsp pepper
1/8 tsp nutmeg
1 tsp butter

Recipe Directions for LOW FAT MASHED CAULIFLOWER POTATOES

  1. Steam/boil cauliflower and potatoes, drain.

  2. Heat milk and half-and-half in microwave for 1-2 min.

  3. Put all ingredients in mixer (I forego the butter and then use lite-butter-type spray when served)

  4. Whip/mash together in mixer (add a little more liquid if necessary) and serve warm.

  5. Can add fat-free gravy if desired.
