A delicious low fat vegetable dish

Recipe Ingredients for Low Fat linguini Vegetable Toss

8 oz uncooked whole wheat pasta
1 tbsp olive oil
3 garlic cloves
2 cups fresh sugar snap peas
1 1/2 cups asparagus spears
4 tomatoes
4 1/2 tsp dried basil leaves
1/4 tsp salt
1/8 tsp black pepper
2 tbsp fresh grated parmesean cheese

Recipe Directions for Low Fat linguini Vegetable Toss

  1. Cook linguine to desired doneness as direceted on package.

  2. Heat oil in a separate nonstick skillet over med-high heat until hot. Add garlic; cook about 30 seconds, stirring constantly. Reduce heat to med. Add asparagus and peas. Cover; cook 3 min. (If vegetables begin to stick, add 1-2 tbsp water.)

  3. Add tomatoes, cook additional 2-4 minutes or until vegetables are crisp-tender, stirring occassionally. Stir in basil, salt and pepper.

  4. Drain linguine, return to pan. Add vegetable mixture, toss to mix. Sprinkle with cheese.
