I used reduced fat milk and splenda to reduce the calories.

Recipe Ingredients for Low Fat Libbys pumpking pie

24 oz (2 cans lowfat evaporated milk)
29 oz (1 can pumpkin)
3/4 cup (splenda for baking)
4 eggs
284 grams (2 deep dish pie crusts)
2 tbls pumpkin pie spice (or more to taste)

Recipe Directions for Low Fat Libbys pumpking pie

  1. mix splenda, dash of salt, pumpkin pie spice

  2. beat eggs

  3. stir in pumpkin

  4. gradually stir in evaporated milk

  5. pour into pie shells

  6. bake in preheated over at 425 for 15 min

  7. reduce temp to 350 and bake for 45-50 min or until pie knife comes out clean from center of pie.

  8. enjoy.

  9. I also like to place foil around the outer crust to prevent burning of the crust.
