Recipe Ingredients for Low Fat Lemony Cheesecake

1 cup (not packed) Cottage Cheese, Lowfat, 2% Milkfat
4 oz Fat Free Cream Cheese
1 large Egg, Whole
0.33 cup Sugars, Granulated
5 large rectangular piece or 2 squares or 4 small rectangular pieces Cookies, Graham Crackers, Plain Or Honey
2 tbsp Vegetable Oil, Canola
1 tsp Lemon Juice
1/2 tsp Lemon Zest

Recipe Directions for Low Fat Lemony Cheesecake

  1. Preheat oven to 350 F.

  2. Mix graham cracker crumbs and canola oil together. Divide and press into the bottom of 6-8 ramekins.

  3. Process the cottage cheese in a food processor until smooth. Add the cream cheese and continue to mix until smooth. Add the whole egg, egg beaters, sugar, lemon juice, and lemon zest and continue to process for another minute. Pour the mixture over the graham cracker crumbs. Place in a roasting pan and fill half-way with water. Bake until the cheesecake is set: the middle should wiggle like jello, about 10 minutes. Cool on a rack, then refrigerate for at least two hours.
