Delicious tangy moist cake. Can be served warm or cold.

Recipe Ingredients for Low fat lemon yoghurt cake

1 1/2 cups plain flour
1 1/2 tsp baking powder
1/2 tsp salt
1 cup yoghurt
1 cup sugar
3 eggs
2 tsp lemon zest
1 tbsp lemon juice
1/4 cup vegetable oil
2 tsp icing sugar

Recipe Directions for Low fat lemon yoghurt cake

  1. Lightly grease a 20 cm (8 inch) round cake pan.

  2. Preheat oven to 180C.

  3. Sift together flour,baking powder and salt.

  4. In a separate bowl mix the yoghurt and sugar until the sugar is dissolved.

  5. Add the eggs,lemon juice and lemon zest to the yoghurt mixture and beat on low speed until well mixed.

  6. Add the flour mixture a spoonful at a time until mixed through.

  7. Add the oil and mix on medium speed until the oil is blended through.

  8. Bake for 45 minutes or until a skewer comes out clean.

  9. Cool in pan for 5 minutes then remove from pan and cool on a rack.

  10. When cool, dust with icing sugar.
