Halibut is one of my favorite fish. Its mild flavor lends itself to a variety of flavors. But in this case, I keep things delicate and simple with fresh parsley and lemon. Prep Time: 15 minutes Cook Time: 10 minutes

Recipe Ingredients for Low Fat Lemon-Parsley Halibut

24 ounces halibut
1/4 cup finely chopped fresh parsley
1 tbsp lemon zest
2 tbsp lemon juice
1 Freshly ground black pepper to taste

Recipe Directions for Low Fat Lemon-Parsley Halibut

  1. Place halibut fillets skin side down in a large glass dish. Sprinkle with chopped parsley and lemon zest. Squeeze lemon juice over fish and season with black pepper. Refrigerate for 10-15 minutes.

  2. Preheat broiler. Spray broiler pan with nonstick cooking spray.

  3. Remove halibut from glass dish and place skin side down on broiler pan and broil for 8-10 minutes, depending on thickness of fillet. Allow 10 minutes per inch.

  4. Serve with a rice pilaf, couscous or quinoa.
