Recipe Ingredients for Low-fat Lemon Curd

1/3 cup Lemon Juice
15 serving Pure Cane Sugar
1 large Egg, Whole
2 1/2 grams Vanilla Extract

Recipe Directions for Low-fat Lemon Curd

Combine lemon juice and sugar in a saucepan over low heat; add fresh lemon zest. In a medium bowl, lightly beat the egg; while constantly beating, very slowly stream in the lemon syrup. Continue beating for 2 minutes, then transfer back to saucepan over low heat and cook until curd just comes to a boil. Remove from heat and add in vanilla.
