Recipe Ingredients for Low fat lemon cake

2 eggs
5 ounces sugar
5 ounces flour
8 fl oz fat free yogurt
1/2 cup lemon zest
8 grams yeast
1 tsp salt
3 tbs confectioner's sugar
1/3 cup lemon juice

Recipe Directions for Low fat lemon cake

  1. Preheat the oven to 350F.

  2. Mix the dry ingredients (yeast, sugar, flour).

  3. In a separate bowl, beat the eggs.

  4. Add eggs, lemon zest and yogurt to the dry mix. Mix well.

  5. Butter a small cake pan, pour in the mix.

  6. Bake for 25 minutes.

  7. Mix the lemon juice with the confectioner's sugar.

  8. Take the cake out of the pan while it is still hot and pour the lemon juice onto the cake.

  9. Ideal to serve with fresh strawberries and a dollop of whipped cream.
