Lasagne with more veggies and meat, less pasta and cheese. Very delicious. Tastes just like the full-fat version!

Recipe Ingredients for Low-fat Lasagne

2 tsp olive oil
1 large onion
3 large carrots
2 zucchini
4 cloves garlic
2 lb beef, ground, 95% lean
13 oz tomato
1/2 cup beef stock
2 tbsp tomato paste
12 oz pasta
1/3 cup cornflour
3 cups skim milk
3 1/2 oz light cheese

Recipe Directions for Low-fat Lasagne

  1. Fry the onion, and after 5 minutes, add the other vegetables until soft. Add the garlic and cook for 1 minute. Then add the beef and cook until well browned. Break up any lumps

  2. Add crushed tomato, beef stock, tomato paste, 2 teaspoons dried oregano, and stir. Bring to the boil and simmer gently partially covered for 20 minutes stirring occasionally.

  3. Spread some of the meat sauce over the base, covering with lasagne sheets. Repeat twice.

  4. To make the cheese sauce, blend a little milk with cornflour in a small pan. Gradually blend in the remaining milk and stir constantly over low heat until it boils and thickens. Remove from the heat and stir in the grated cheese until melted. Spread evenly over the top and bake for 1 hour in 350 degree F/180 degree C oven.

  5. If, after 25 minues, it is browning too quickly, cover loosely with foil.
