Recipe Ingredients for Low-Fat, High Flavor Vegan Pancakes

3/4 cup white flour
1/4 cup whole wheat flour
2 1/4 teaspoons baking powder
1 tablespoon sugar
1 teaspoon vanilla
1 1/2 tbsp flax seed, ground
1 1/4 cup water
3 tbsp water
2 tbsp applesauce, no sugar added
1 tsp cinnamon or apple pie spice

Recipe Directions for Low-Fat, High Flavor Vegan Pancakes

  1. Whisk ground flax seed mixture and 3 tbsp water until gooey [will resemble egg whites]

  2. Mix wet ingredients in a medium sized bowl. [flax seed mixture, vanilla, 1 cup water, applesauce]

  3. Mix dry ingredients in a larger bowl. [spices, sugar, baking power, flours]

  4. Pour wet ingredients into dry - mix well until smooth consistency.

  5. Drop onto medium heat (preheated) pan. Flip over when each pancake begins to bubble on top.

  6. Serve with vegan buttery spread (if desired) and maple syrup.
