Recipe Ingredients for About.com Low Fat Herbed Zucchini Mushroom Frittata

3/10 cups zucchini, sliced
1 cup mushrooms, sliced
1/2 cups Better'n Eggs
1 large egg
1/4 cup fat-free milk
1 tsp black pepper
1/2 tsp dried oregano
28 grams Schnucks Mozzarella

Recipe Directions for About.com Low Fat Herbed Zucchini Mushroom Frittata

  1. Spray non-stick pan with cooking spray

  2. Sauté mushrooms and zucchini until softened

  3. Preheat broiler.

  4. Combine eggs with milk, ground pepper and oregano.

  5. Pour mixture over vegetables in skillet.

  6. Sprinkle with cheese.

  7. Cook gently for five minutes

  8. Transfer skillet to broiler and cook frittata under the broiler for 3-4 minutes until eggs are set and are golden in color.

  9. Remove skillet

  10. Cut up frittata and serve!
