Recipe Ingredients for Low-fat Fruited Chicken Salad

4 cups chicken breast, cooked/coarsley chopped
1/4 c. thinly sliced celery
2 T. chopped green onion
4 ounces crushed pineapple, reserve juice
1 c. grapes, seedless/cut into fourths
1/4 c. raisins
1 apple, peeled and chopped
1/4 cup almonds, slivered
1 c. fat-free mayonnaise
1 T Dijon mustard
1/2 t. curry powder
2 T. pineapple juice, reserved

Recipe Directions for Low-fat Fruited Chicken Salad

  1. In large bowl, combine chicken, celery, green onions, drained pineapple, grapes, raisins, apple and almonds.

  2. In a small bowl combine the mayonnaise, mustard, curry powder and reserved pineapple juice.

  3. Stir to mix thoroughly, then combine with the chicken mixture until moistened.

  4. Chill for 1 hour to blend the flavors.
