Tastes like a cross between hearty banana bread and a graham cracker. Delicious and "health friendly" (in moderation, of course!)

Recipe Ingredients for Low-fat fruit and oatmeal cookies

3/4 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons unsalted butter, at room temperature
1/2 cup granulated sugar
1/2 cup (packed) light brown sugar
1 banana (1/4 cup blended)
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
2 cups rolled oats (not instant)
1/2 cup dried mixed fruit
1/4 cup sliced almonds

Recipe Directions for Low-fat fruit and oatmeal cookies

  1. Preheat oven to 375 F.

  2. Mix dry ingredients (except sugars, oatmeal, dried fruit, and nuts) in a small bowl. Blend wet ingredients and sugars. Stir in dry ingredients. Add oatmeal, dried fruit, and nuts.

  3. Drop balls onto ungreased cookie sheet. Bake 5-7 minutes, until golden tips form.

  4. Makes 36 cookies.
