Recipe Ingredients for Low Fat Fettuccini Alfredo

2 T MARGARINE
2 cloves garlic, minced
2 T flour
1 1/3 c skim milk
2 oz. Neufchatel cheese
1 c grated fresh parmesan cheese
2 tsp chopped fresh parsley
1 fresh ground pepper
4 cups whole wheat spaghetti, cooked

Recipe Directions for Low Fat Fettuccini Alfredo

  1. Melt margarine in saucepan over medium heat.

  2. Add garlic; saute 1 minute

  3. Stir in flour

  4. Gradually add milk, stirring with a wire whisk until blended

  5. Cook 8 minutes or until thickened and bubbly, stirring constantly.

  6. Stir in cream cheese, cook 2 minutes.

  7. Add Parmesan cheese, stirring constantly until it melts.

  8. Stir in fresh parsley and pepper.

  9. Serving size: 1 cup pasta; 1/2 cup sauce
