Recipe Ingredients for Low-fat Eggless Ceasar Salad

1 T fresh lemon juice
2 anchovy fillet, minced (or 1 T anchovy paste)
1/4 t minced garlic (1 small clove)
1/4 t Dijon mustard
1 T olive oil
1 T Parmesan cheese
3/4 lb romaine lettuce, chopped

Recipe Directions for Low-fat Eggless Ceasar Salad

  1. Whisk together lemon juice, anchovy, garlic, and mustard in a large bowl; slowly beat in oil.

  2. Add lettuce to bowl and toss.

  3. Sprinkle Parmesan cheese over top; toss again, then serve
