Low fat cheese and egg beaters with a mixture of vegetables baked.

Recipe Ingredients for Low Fat Egg & Vegetable Cups

6 oz of low fat cheese
3/4 cup of bread crumbs
2 slices of whole wheat bread
1 cup of broccoli
1 cup of onions
6 oz of mushrooms
1 salt and pepper
2 cups of egg beaters
1 vegetable oil spray

Recipe Directions for Low Fat Egg & Vegetable Cups

  1. Chop up all vegetables and lightly season with salt and pepper. (Crushed red peppers add a nice bite!) Spray a 1/2 dozen size muffin pan with vegetable oil spray liberally. Heat oven to 350.

  2. Grind whole wheat bread and mix with regular bread crumbs. Heat a regular size pan without any oil at medium high and toss in the bread crumbs to brown for a few minutes. Keep stirring and make sure not to burn the crumbs. Remove from pan when they are nicely brown but not burnt and let cool. Reserve 1/4 cup of bread crumbs and lightly dust the muffin pan entries.

  3. Put egg mixture into a large bowl and add vegetables. Grind cheese and cut into 1/2 inch chunks by hand if preferred. Add cheese and when bread crumbs when they have cooled down. Mix everything together and then pour into muffin pans evenly.

  4. Place in center rack of oven and bake for about 50 minutes. Serve with fresh cucumbers and tomatoes for a healthy meal! Enjoy.
