A favorite recipe, just healthified! Also great with a sprinkle of ground fennel or a teaspoon of Chinese Five-spice. Or substitute fresh apple chunks for the craisins. Keep an eye on the baking time; despite my living at high altitude, the muffins finished 12 minutes early, and the bread finished almost 15 early.

Recipe Ingredients for Low-fat Delicious Pumpkin Muffins

4 eggs
1 3/4 cups sugar
1 cup applesauce
15 ounce solid pack pumpkin
3 cups whole wheat flour
1/2 teaspoon salt
1 3/4 teaspoons baking soda
2 3/4 teaspoons ground cinnamon
3/4 teaspoons ground nutmeg
3/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1 cup craisins

Recipe Directions for Low-fat Delicious Pumpkin Muffins

  1. Preheat the oven to 375 degrees F.

  2. Grease two loaf pans or 24 muffin cups. Combine the eggs, sugar, oil, and pumpkin in a large bowl, and stir until smooth.

  3. In a medium bowl, mix the second set of ingredients with a wire whisk.

  4. Add the craisins (or raisins, if you prefer).

  5. Add to the egg mixture and mix thoroughly.

  6. Fill the loaf pans or muffin cups with the batter.

  7. Bread or muffins may be topped with cinnamon sugar, if you like.

  8. Bake the bread at 375 degrees F for 1 hour and 10 minutes, or the muffins for 35 to 40 minutes. When the bread is done, a toothpick inserted in the center will come out clean.
