This low fat crockpot beef and black bean stew makes a warming meal for a cold or wet evening. While it's true that the leanest cuts of beef can be tough, a day in the crockpot will tenderize the toughest of cuts.

Recipe Ingredients for Low Fat Crockpot Beef and Black Bean Stew

1 medium onion, chopped
3/4 pound lean beef
15 ounce diced tomatoes
4 ounce diced jalapenos
15 ounce reduced sodium black beans
1 tsp ground cumin
2 tsp chili powder

Recipe Directions for Low Fat Crockpot Beef and Black Bean Stew

  1. Coat bottom of a 3-4 quart crockpot with nonstick cooking spray. Place chopped onion in the pot, followed by beef, tomatoes, jalapenos and black beans. Add cumin and chili powder, and mix into the juices a little.

  2. Cover and cook on low for 8 hours.
