Very healthy, tasty, low-fat soup.

Recipe Ingredients for Low Fat Creamy Vegetable Soup

1 leek
2 carrots
10 button mushrooms
1/2 onion
1 cup chopped celery
1 1/2 cups water
1 tsp salt

Recipe Directions for Low Fat Creamy Vegetable Soup

  1. Wash and roughly chop all vegetables and place in saucepan. Cover with water and add salt and a garlic clove (to taste). Bring to boil, and simmer, partly covered, for 30 minutes.

  2. Put into blender and blend until smooth. Serve with 1 tsp of olive oil drizzled on top, and 2 tsps parmesan cheese.
