Recipe Ingredients for Low Fat Creamy Potato Soup (Slow-Cooker)

1/4 lb turkey breast, slices
1 small onion, chopped
5 medium potatoes, chopped
14 ounces chicken broth
2 cups water
1/2 tsp salt
1/2 tsp celery seed
1/2 tsp pepper
1/2 cup all-purpose flour
2 cups fat-free half and half
1 cup cheddar, shredded

Recipe Directions for Low Fat Creamy Potato Soup (Slow-Cooker)

  1. Brown turkey and onions and put in crock pot.

  2. Add chopped potatoes, chicken broth, water, salt, celery seed and pepper. Simmer for 6-6.5 hours on Low.

  3. In separate bowl, mix flour and half and half. Then add to soup in crock. Strain as you pour to minimize lumps from the flour.

  4. Stir in cheddar. Simmer for 30 minutes on Low.

  5. Serve hot.
