A quick and easy broccoli soup with big chunks and flavour without all the calories and salt of traditional cream soups.

Recipe Ingredients for Low fat cream of broccoli soup

2 cups broccoli
2 1/2 cups water
1 cup onion
1/2 cup celery
1/4 cup flour
2 tbsp margarine
1 tsp garlic
2 cups milk
1 tsp salt
1/2 tsp thyme
1/2 tsp marjoram

Recipe Directions for Low fat cream of broccoli soup

  1. Boil broccoli in water

  2. While broccoli is cooking saute onions, celery and garlic in margarine

  3. Add flour to margarine mixture and cook a little longer

  4. Slowly add milk stirring constantly

  5. Add broccoli, water and spices

  6. Simmer over low heat until soup thickens
