Easy, flavorful and "creamy" asparagus soup guilt free

Recipe Ingredients for Low fat cream of asparagus soup (homemade)

1 lb asparagus
1 yellow onion
3/4 cup white wine
3 cups chicken broth
3 tablespoons sour cream
1 teaspoon salt

Recipe Directions for Low fat cream of asparagus soup (homemade)

  1. Dice onion

  2. Trim rough ends from asparagus and chop coarsely

  3. Heat heavy pan and coat with cooking spray

  4. Add onions and cook until translucent

  5. Add chopped asparagus and cook for 2 more minutes

  6. Add wine and increase heat to bring near boil

  7. Add salt, pepper and pinch of cardamom

  8. Add chicken broth and bring to boil

  9. Reduce heat, and simmer until vegetables are soft and cooked through (20+ mins)

  10. Transfer to blender and puree until smooth

  11. Return to pot and whisk in sour cream to taste
