used pitted dates for date butter used soy milk

Recipe Ingredients for low fat cranberry muffins

1/2 c pitted prunes
2 tbs water
1 1/3 c unbleached all-purpose flour
1 c oats
3/4 c sugar
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt (optional)
1/2 c skim milk
1 tsp vanilla extract
2 egg whites, lightly beaten
1/2 c cranberries, fresh or frozen

Recipe Directions for low fat cranberry muffins

  1. preheat oven 375f

  2. puree prunes [dates] into butter w/ water

  3. combine dry ingredients

  4. combine wet ingredients

  5. add wet to dry

  6. beat

  7. bake 20 mins
